Home Made Chorizo David’s Way

I have not made this for a while, but if you like Huevos Rancheros (eggs and chorizo) you are in for a real treat with this one. Even better is to fix this chorizo, scramble some eggs and roll it all up in a low carb tortilla for a breakfast burrito that is high in protein and low in carbs! The next best thing is this is stupid simple to make.

  • 1 lb coarse-ground lean pork
  • 1 tsp salt
  • 2 tbsp chili powder
  • 1/4 tsp cloves
  • 1/2 tsp cinnamon
  • 1 tbsp paprika
  • 1 clove garlic, crushed
  • 1 tsp oregano
  • 2 tbsp cider vinegar
  • 2 tbsp water
  • 1 tbsp red pepper flakes (optional)

Combine all these ingredients really well and then either stuff into casings, form into patties or cook loose. See, that was stupid simple and takes no time and little expense to rock your world at the breakfast table.
