4 Pepper Chicken Patties

Ever get bored with the same ol same ol when it comes to grilling out? Would you like a little something different, full of delicious flavor and healthy to boot? If you answered yes, give these Chicken patties a try. Your family and friends will be pleasantly surprised and you do not have to compromise healthy eating for a cook out.

  • 1 lb skinless and boneless chicken breasts, cut into 1 inch cubes
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp ground white pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp ground cumin
  • 3 tbsp finely chopped Italian parsley
  • 3 tbsp finely minced green bell pepper
  • 3 tbsp finely minced red bell pepper
  • 1 tbsp olive oil for brushing

Get your grill fired up with a good hardwood charcoal and then get busy preparing the chicken.

Combine the chicken, garlic, salt, white pepper, paprika and cumin into a food processor and process until it is coarse. Mix in the green and red peppers and parsley and pulse a few times, just enough to incorporate.

Form into patties and baste with olive oil top and bottom before placing them over your hot charcoal. Baste with olive oil while cooking and be careful when turning to keep the patties from breaking apart.

When done, you can baste them with a good bbq sauce or not. It is a matter of choice, same as having them served on a bun or not. Personally, I like a little bbq sauce caramelized on them and no bun.

These are also good if the day is just too yucky to want to cook outside, you can cook them with a little olive oil in a non-stick skillet and still have great results. And, you can make them into meatballs and have them with spaghetti too.

I am thankful my sweet mother encouraged me at a young age to learn my way around the kitchen.

      A book based off the blog with recipes is coming. Hopefully out this time next year. Brenda and I both are completing certifications as nutritionists along with a couple other items. My plan includes doing seminars in about a year too.
