4 skinless boneless chicken breasts
salt to taste
1/2 teaspoon black pepper
2 cups fresh blackberries or raspberries
1/4 cup balsamic vinegar
1 teaspoon butter
2 Tablespoons fresh basil
2 Tablespoons scallions
2 teaspoons minced jalapeno peppers
1 teaspoon cornstarch
1/2 cup water, divided
Place chicken, sprinkled with salt and pepper, in roasting pan and bake at 350 degrees until the internal temperature reaches 165 degrees. Put berries, jalapenos, butter and 1/4 cup of water into a saucepan and cover and let simmer on low heat until berries begin to reduce. Whisk the cornstarch with remaining water and whisk into mixture and simmer until thickened to a glaze. Spoon in the scallions and the jalapenos. Take chicken from oven and coat the chicken with the glaze for the last ten minutes of cooking.
