I am an voracious consumer of information and thusly read a lot. I love reading and learning, hell I have been known to pick up random encyclopedias and just read stuff for the sake of learning. Nowadays, besides being a nutrition and fitness author, I also still like to read what my fellow writers are putting out, which is how I found this delicious breakfast idea from a lovely lady, Diane, who authors InDianesKitchen.com. Please check her sight out. Diane, please forgive me, but I have taken a couple liberties with your recipe for Fried Oatmeal
- 1 cup Old Fashioned Oats
- 2 cups milk
- salt to taste
- 1/4 cup dehydrated cranberries ( blueberry infused would be great too)
- 1/4 cup diced and peeled apple
- 1/4 cup finely chopped pecans
- 1 tbsp butter
- 1/2 tsp saigon cinnamon
1. Spray a baking dish with cooing spray and set aside.
2. In a sauce pan, bring your milk and salt to a boil and stir in your oats and apples then cook over medium heat about 5 minutes until done. Stirring occasionally. You would not have to ad the apple at this time, but I think they would be better cooked some at this time.
3. Once your oats and apples are cooked, stir in the dehydrated cranberries, pecans, butter and cinnamon and then spread evenly in your baking dish. You will want your mixture spread about a 1/2 inch thick. Place in your refrigerator and chill over night or until the oatmeal is set where you can cut it in rectangles or squares.
4. Place your oatmeal squares in a heated non stick skillet with a little cooking spray an cook until golden brown on both sides.
5. Once cooked, serve on a plate with sugar free maple syrup and enjoy a heart healthy breakfast that is low on the glycemic index scale.
