With the approaching holidays it is an easy time to get side tracked on our diets with so many sweet treats at family and friend get togethers. Over the course of this seaon, we will be putting up delicious recipes that will help tame your sweet tooth while not causing you to have to worry about the readings on your scales, and that will not cause you to have spikes in your blood sugar or insulin. While you can not just gorge on these desserts all willy nilly, you can still enjoy them guilt free on special occasions.
- 1 tbsp unsweetened peanut butter
- 2 tbsp coconut flour
- 1 egg beaten
- 2 tbsp almond milk
- 1/4 tsp baking powder
- 1/4 tsp vanilla extract
- 1/2 tsp vanilla or toffee flavored liquid stevia
1. Microwave the peanut butter for 30 seconds to soften in a greased mug or rameken you plan to use.
2. Stir in the remaining ingredients until well combined.
3. Microwave for 1 minute then check the center of the cake with a toothpick. If it comes out clean, let cool slightly and enjoy. If it is still slightly wet on the toothpick, microwave for another 30 seconds
For an optional topping:
- 1 tbsp unsweetened peanut butter
- 2 tbsp heavy whipping cream
- 1/4 tsp vanilla or toffee flavored liquid stevia
1. Simply mix these ingredients in a bowl with a hand mixer until desires texture is achieved.
Spread on your mug cake and enjoy! This simple recipe is going to be 245 calories, 11g carbs, 16.1g fat and 13.4g protein
