2 Tablespoons butter
2 yellow onions, finely chopped
5 1/3 oz. bacon, diced
8 oz. celery, diced
1 apple, grated
2 oz. pecans, chopped
2 slices low-carb bread
1 cup heavy whipping cream
30 oz. ground pork or beef
fresh sage 2-3 sprigs, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1 Tablespoon butter to grease the baking dish
Preheat oven to 350 degrees
Brown onions, bacon and celery in butter
Stir in 2/3 sage plus all of the grated apple and pecans
crumble the low carb bread in a big bowl and pour heavy cream on top, allowing bread to swell a bit
Add ground pork or beef, spices and browned onion and spice mixture
Toss lightly
Bake 25-30 minutes until the meat is throroughly cooked.
Garnish with the rest of the fresh sage
