Quick and Easy Beef/Vegetable Soup

If you like to use fresh ingredients and make things from scratch, that’s great.  It’s healthy, but for those times when you are just trying to avoid the drive-thru, here’s a lightning fast wholesome soup that eats like a meal.  Add cornbread or whatever side that you desire and you can’t beat it to satisfy.  It’s great with no side and supplies all the carbs you should have in one meal anyway…enjoy!

1# browned 93% lean ground beef

2-3 medium potatoes diced and cooked to barely tender, (they will cook a little more)

1 cup diced carrots, precooked to tender

1 15 oz. can whole kernel corn

1 cup frozen okra (add close to end and barely cook)

1 1/2 cups frozen green peas (add at end and barely cook, you want them to pop when you bite them)

1 15 oz. can green beans

1-2 small cans tomato sauce

Mix it all in a boiler and simmer just until blended.  Add spices that you enjoy.  I use onion powder and black pepper. This makes HUGE portions. You will be full. ;-*
