10 eggs

1/3 cup milk

1 cup grated sharp cheddar

4 oz. bacon, cooked

1/4 teaspoon salt

1/4 teaspoon pepper

1 Tablespoon chopped chives

Olive Oil Spray

*****************************************************************

Preheat oven to 375

Spray muffin cups lightly with  olive oil spray

Whisk together eggs and milk

Stir in 3/4 cup cheddar and cooked bacon

Divide evenly into 12 muffin cups

Sprinkle with remaining cheese and chives

Bake at 375 for about 20 minutes or until centers are set and beginning to brown
