Low Carb Mock German Potato Salad

1 head cauliflower cut into florets

Cooking spray

Salt and pepper

6 slices bacon

1/2 cup onion

1/2 cup extra virgin olive oil

1/4 cup white vinegar

1/2 t. Salt

1/2 t. ground paprika

1 t. Dijon mustard

1 t. Swerve or equivalent granulated sweetener

Preheat oven to 425

Spray cookie sheet with cooking spray

Sprinkle salt and pepper on the cauliflower

Roast 15 minutes and then stir

Roast 5-10 minutes longer or til tender

Cook bacon til crispy.

Drain

Saute onions in bacon grease til brown

Mix together cauliflower, onions, bacon and dressing

Serve hot! 😋
