Sugar-Free Maple Walnut Muffins

Ingredients

Muffins

2 cups almond flour

1/2 cup Swerve Granulated

1/3 cup unflavored whey protein powder

1/4 cup coconut flour

2 teaspoons baking powder

1/4 teaspoon salt

3 large eggs

1/2 cup butter, melted

3/4 cup unsweetened almond milk

1 teaspoon maple extract

3/4 cup chopped walnuts, divided

Glaze

1/4 cup Swerve Confectioner’s

2 Tablespoons heavy cream

1-2 Tablespoons water to thin glaze

Instructions

Muffins

Preheat oven to 325F and grease 12 muffin tins well or line with paper liners.

Combine almond flour, Swerve Granulated, protein powder, coconut flour, baking powder and salt and stir in eggs, melted butter, almond milk and maple extract til well mixed and stir in 1/2 cup of walnuts.

Put batter in muffin tin and sprinkle with remaining nuts, pressing lightly to adhere. Bake 25-30 minutes til set and golden brown.

Cool completely,

Glaze

Combine Swerve Confectioner’s, cream and maple extract and just enough water to thin to drizzling consistency. Drizzle over cooled muffins.

    Just wondering what your thoughts are on artificial sugar. Not that great but doesn’t affect our body as sugar does? Better of the worst? haha

      I do not care for most artificial sweeteners but will use Splenda and Swerve brand Erythritol on occasion.

      Hi there! I like Swerve, a natural sugar alternative that is 90% absorbed into the bloodstream. It has a Glycemic Index of 1 so it doesn’t impact blood sugar…and it tastes great and is available in Granulated, Confectioner’s and Brown. I also use Splenda.         What’s your view of eating sugar free candies just to get that sugar taste I need, instead of having simple carbs with refined sugar like a piece of cake?

        Before I completely kicked my sugar addiction, I did that and as I said before, I use 0 calorie sweeteners now for oats, protein pancakes, protein shakes, Greek yogurt and more. Some people are against 0 calorie sweeteners but as you said, you’re replacing high calorie, simple carb foods with 0 calories and an insignificant impact on blood sugar. If it helps you manage your health priorities, I believe it’s fine to do that. I buy those types of products for a family member. I love Maple Grove Farms Sugar Free pancake syrup with Birchbenders Keto Pancakes. 😋

        I occasionally will enjoy a piece of sugar free candy. Russel Stovers have some that are pretty decent. I am a lifelong chocolate and caramel lover, and these candies allow me a good taste without affecting my blood sugar nor do they give me carb cravings either.

        Diabetes runs strong in my family. I’m not diabetic, but I eat a very diabetic friendly diet with the elimination of sugar.

        With some sugar free candies, you really do not want to eat too many as they can cause gastrointestinal upset because of the sugar alcohols used. I find that for me, this helps with moderation.😁
