4 cups shredded rotisserie chicken
7 ounces cream cheese
1/3 cup no sugar added mayonnaise (I like Duke’s)
1 red bell pepper
1 yellow onion
2 Tablespoons Tex-Mex seasoning
7 ounces shredded Mexican Blend cheese
Salt and pepper
Preheat oven to 400F
Shred chicken and chop peppers and onions.
Mix everything except for 1/3 of the shredded cheese in a greased baking dish.
Add the remaining cheese on top and bake for 15-20 minutes or until golden brown.
Serve over bed of romaine lettuce.
