Chocolate Cake!
I remember the moment, many years ago, when I decided that no matter how much chocolate cake I ate, I would never get enough. I decided right then and there that one bite would suffice since I would never be satisfied regardless of the empty calories that I scarfed down with this stuff. As I was shopping for a no sugar added mix for my son’s birthday, I found this new offering from Birch Benders. I ate more than one bite with no regrets. There’s 250 calories, 5 grams of protein and 5 Net Grams of carbs in one serving of the cake with frosting. I ate the entire piece.
Good Stuff!
The cake mix contains almond flour, erythritol, organic coconut flour, alkalized cocoa powder, cassava starch, leavening, stevia and monk fruit extract. Almond flour is a great source of protein and healthy fats. Erythritol is considered a natural, 0 calorie sweetener that doesn’t cause gastric upset in most people.
The first ingredient in the frosting is palm oil. Palm oil is rich in vitamin E. Some studies indicate that it may promote brain health. It may also increase the amount of vitamin A you can absorb which is beneficial to eye health. Studies indicate a marked difference in the action of fresh or reheated palm oil in the body. While fresh oil appears to be beneficial, reheated oil may increase bad cholesterol, however there’s no reason for a buttercream frosting to be reheated. Because palm oil has been a point of controversy due to the high saturated fat content, I won’t be eating this all the time but it’s great for a special occasion. It also has coconut oil in it that gives it a delightfully silky texture.

I do consider myself a chocolate cake connoisseur and I can assure you that is true of my son. We have both eaten our share of great chocolate cake and we agreed that this cake is as good, or better than any chocolate cake we’ve ever eaten. I’ve paid way too much for him to have chocolate cake in restaurants where that was their flagship. We know chocolate cake. This stuff is good.
Easy!
The cake mix takes only minutes to stir up, no mixer required. The frosting is incredibly thick in the can so I dumped it in a bowl and beat it with an electric mixer to spreadable consistency. It was perfect.
Cost and Availability
Both products are about $7 each and available at Walmart, Amazon and other grocery outlets. To make a full sheet cake, you need two mixes and two cans of frosting. Each cake mix will make one 8 or 9 inch round or 10-12 cupcakes. The frosting has 11 servings in each can. It’s a bit pricey but if you want a great cake, or cupcake, that won’t leave you with cravings for more, it’s well worth the price. No-sugar added desserts do not induce cravings!
