If you loved the old fashioned lemon cooler cookies from times past, you’ve got to try this no sugar added version! They’re perfectly lemon and chewy and crunchy at the same time. They take about 15-20 minutes to make, including baking time! What could be better?!?

Preheat oven to 350F.
Cover cookie sheet with parchment paper.
2 cups almond flour
1 cup 0-calorie granulated sweetener of choice
1/4 teaspoon salt
4 packets True Lemon Crystalized Lemon
2 egg whites beaten to stiff peaks, MUST BE ROOM TEMPERATURE!
1/4 cup Swerve Confectioner’s
2 packets of True Lemon
Mix dry ingredients.
Mix in beaten egg whites until fully incorporated.
Scoop into heaping Tablespoons to make 12 cookies.
Roll into a ball.
Dredge in topping.
Place on cookie sheet and mash down gently.
Bake at 350F until slightly brown on bottom.
You may dust with additional topping if you like!
