Peanut Butter Protein Cookies (No Sugar Added)

Net Carbs 2.8 grams

Protein 7.7 grams

Preheat oven to 350F.

1 cup “No Sugar Added” peanut butter, (I like Smucker’s.)

2/3 cup Swerve Granular (or your favorite 0 calorie granulated sweetener)

1/4 cup vanilla protein powder (NO SUGAR ADDED!)

2 eggs

Beat all ingredients together until the cookie dough is mixed well. (Beating the dough well toughen the protein in the eggs and makes the cookies stick together better!)

Scoop out into 12 equal portions, a little over 2 Tablespoons each.

Roll into balls and place on parchment paper. (Keep your hands wet!)

Press down with tines of fork dipped into water.

Bake for 10-13 minutes in center of oven until they are just beginning to brown around the edges.
